Ingredients:
1 Red Pepper, Julienne Cut (long thin strips)
1/4 of a medium sized Sweet Onion, Julienne Cut
1 TBS Spice Spice Baby VIP HDP
1 TBS Butter or Margarine
1/4 Cup Water
1 Bunch Fresh Asparagus (remove the bottom 1-2 inches or so of the asparagus.
Equipment:
12" Fry Pan or Saute Skillet
Measuring Cups and Spoons
Method:
1. Place the butter and VIP HDP in the skillet and heat on a high flame.
2. Once the butter is melted, add the onion and red pepper and saute them in the butter and spices for 3-5 minutes. Place the asparagus directly on top of the onions and peppers.
3. Add the water, and cover the top of the pan. Let it cook, without stirring for 4-5 minutes.
4. Uncover and serve while its hot.
Commentary:
If you have not experienced HDP (Herbs De Provence) before, you are in for a treat.
This blend of spice is a staple in a French home. HDP is great on fish, as a seasoning for roasted vegetables or potatoes, and is even used to season roasts and slow cooked meats. HDP is salt free without sacrificing flavor. You may want to use smaller amounts until you know for sure you like it....some folks report that it is an acquired taste. If you like the aroma, you'll love the taste.
