2 Cups of All Purpose Flour
1 1/2 TSP Baking Soda
1 1/2 TSP Baking Powder
1 TBS Sugar
1 1/4 TSP Salt
2 1/2 Cups Buttermilk
3 TBS Melted Butter or Margarine
2 Eggs, Beaten
1. In a large mixing bowl, combine all the wet ingredients.
2. Add the dry ingredients and mix thoroughly by hand.
3. Cook the pancake batter in a cast iron skillet or on a griddle until the pancakes are golden brown and delicious.
I like this because it combines the richness of the buttermilk with the sweet of the Easy Like Sunday Morning. My daughter Nina loves my pancakes, and we have these as a quick dinner option pretty regularly.
When I have time I like to make a quick whipped cream with Easy Like Sunday Morning to garnish the flapjacks. That makes these extra special.
