1 whole roasting chicken
3 T extra virgin olive oil
1 lemon, zested and halved
5 T Ziggy Plays Za'atar seasoning
2 garlic cloves
6 thyme sprigs
4 red potatoes, scrubbed and cut into wedges
4 shallots, peeled and quartered
1 T extra virgin olive oil
2 T sumac
Preheat oven to 425.
Season the chicken, inside and out with salt and pepper. Stuff the lemon, garlic cloves and thyme inside. Add the olive oil, lemon zest, and za'atar to a small bowl, mix and rub all over the chicken. Cover and refrigerate until ready to roast.
Place the potatoes and shallots in a 9 X 13 glass or metal baking dish. Toss with olive oil, sumac and season with salt and pepper. Place chicken, breast side up, on top. Roast for 15 minutes, then reduce the heat to 350. Roast about another hour and 20 minutes until the juice runs clear.
Let rest for 10 minutes before removing lemon, garlic and thyme and carving.
